Cinnamon Roll Protein Pancakes

This morning I had a craving for cinnamon rolls right after a workout (that's normal, right?)

...and this is what came of it! In this recipe, there is 3 grams of sugar and 49 grams of protein. What? One more time... 49 grams? That's almost as much protein as there is in 8oz of chicken. But in pancakes. WIN.

Please note: this recipe is grain free! The texture will not be the same as a lot of my other pancake recipes but theyre still delicious!

for the pancakes:

1 scoop of whey protein powder (I used ISO-100 birthday cake)

1 egg

1 egg white

1 Tbsp water

1 Tsp baking powder

for the cinnamon mixture:

1/4 scoop whey protein powder

1 Tsp Cinnamon

1 1/2 Tbsp almond milk

for the glaze:

1/4 scoop whey protein powder

1/2 Tbsp almond milk

for the pancakes:

Mix all of the ingredients in a nutribullet or any mixer. Let it sit for a minute or two. As you let it do so, heat up the pan and mix the cinnamon mixture in a small bowl and the glaze in another.

Cook the pancakes as you would regular pancakes. After they begin to bubble, pour a small amount of the cinnamon mixture onto the pancakes with a spoon. Flip and cook for another minute.

When they are all done, stack and cover with the glaze. Enjoy!

Note** For a thicker glaze, you can mix greek yogurt or any other type of yogurt.
