Birthday cake Protein Pancakes

Yesterday was a great day because I TURNED 21!! I was surprised by my man Tony who took me to the Santa Barbara for the day. It was beautiful. How much fun are birthdays? You get to celebrate another year on this earth with the people you love... And you can put sprinkles on anything you want and no one questions it... Like I did here! Yesterday I made these gluten free protein pancakes and I couldn't have been happier with the result.

INGREDIENTS:

For the pancakes:

3 egg whites

4 TBSP coconut flour

1 TBSP greek yogurt

2 TBSP almond milk (or any liquid of your choice)

1/2 scoop of protein Powder (I used Birthday Cake Iso-100 Whey Protein Powder)

1 Tbsp rainbow sprinkles

For the frosting:

3 Tbsp Fage 0% nonfat greek yogurt

1/2 scoop protein powder

2 TBSP almond milk

1 TBSP rainbow sprinkles

 

DIRECTIONS:

For the pancakes:

1. Add all of the ingredients together in a Nutribullet (or mixer of your choice) EXCEPT for the rainbow sprinkles. When mixture is combined, mix in the sprinkles with a fork. Heat a griddle and  place a dollop of batter onto the hot pan. Flip when they begin to bubble. Cook for another couple minutes. Enjoy!!

For the frosting:

Mix protein powder, yogurt and almond milk until smooth. Once combined, pour onto cooked pancakes and top with sprinkles.
