Frosted Coconut Sugar Cookie Bars

Hi foodies! So sorry for the delay with posts- I have been very busy lately but I haven't forgotten about you! I even came up with one of my favorite cookie bars yet- these amazing Frosted Coconut Sugar Cookie Bars! YUM!

These bars are made with salted butter both in the cookie AND the frosting so they have that perfect salty-sweet taste (my favorite!!) 

They are light and buttery and stupid good. Sorry cookies, I didn't mean it.

INGREDIENTS:

For the sugar cookie: 

1 Cup salted butter, Room Temperature

1 Cup granulated sugar  

1 large egg, room temperature

2+1/4 Cups all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon vanilla extract

1/2 teaspoon almond extract (optional) 

 

For the coconut frosting: 

1/2 Cup salted butter, room temperature

3 cups powdered sugar

3–4 tablespoons coconut milk

1 teaspoon coconut extract

 

DIRECTIONS: 

1. Preheat oven to 375F. Line a 7 x 11 baking dish with foil or spray with nonstick cooking spray. Set aside. (NOTE** you can also use an 8 x 8 baking dish for thicker sugar cookies)

2. In a stand mixer with the paddle attachment or using a large mixing bowl cream together the butter and sugar until fluffy. Add the egg and mix just until combined. Then, slowly add the flour, baking soda and extracts. Mix until a dough is formed.

2. Press all of the dough into the prepared baking dish and bake for 15 to 18 minutes or until light golden brown. remove from oven and let cool.

 

For the coconut frosting: 

1. Using a stand mixer with a whisk attachment or using a large mixing bowl, whisk the butter until fluffy – about three minutes.  slowly add the powdered sugar and coconut milk, alternating between the two until smooth. Add the coconut extract and whisk for about 5-8 minutes. This step is extremely important! It makes your frosting fluffy and taste much better.

2. Once the sugar cookie is completely cooled, spread the frosting on and sprinkle with the shredded coconut. Cut into squares and enjoy!
