Single Serve Paleo Blue(Berry Bliss) Crisp

It's almost the New Year and I'm SO excited for what this next year will bring! Good health has always been a priority of mine so I want to try to nourish my body in the best way possible. 

Lately, I've been craving tons of sweets which can be difficult around the holidays- COOKIES ARE EVERYWHERE!!  

So that's where my inspiration came from for this post. I wanted to create a single-serve treat that's guilt-free and filled with nutrients... So naturally I grabbed my Berry Bliss Superfood Powder and got to brainstorming.  

I'm happy with the outcome and I KNOW you will be too.  

INGREDIENTS

1/2 Cup Fresh or Frozen Blueberries  

1 Teaspoon Berry Bliss  

For the topping: 

1+1/2 Tablespoon Almond Meal

1 Tablespoon Coconut Flour

1 Teaspoon Coconut Oil (Melted) 

1 Teaspoon Coconut Sugar (optional) 

A Pinch of Salt

DIRECTIONS

1. Preheat your oven to 375F.  

2. In a small bowl, toss the blueberries in the Berry Bliss Powder until they are evenly covered. Pour the blueberries into your ramekin. Set aside. 

3. In a separate small bowl, mix together the almond meal, coconut flour, coconut oil, coconut sugar and salt until combined. Place this mixture on top of the blueberries and slightly pat down with a fork, spoon or your fingers.  

4. Bake for 25-30 minutes or until the blueberries are bubbling and the crisp topping is golden brown. 

5. Once it's done, remove from oven and let cool for 5 minutes. ENJOY!

Chia Seed Pudding 3 Ways

Happy Monday pretty people!! 

I've been fortunate enough to have met the incredibly beautiful Sophie Jaffe from thephilosophie.com  who gave me some organic goodies from her company that I am IN LOVE WITH. 

I tried both the Berry Bliss and the Coconut Magic and it's safe to say I'm hooked! Her products are organic and crazy good for you. Go to the site and grab some for yourself!

So lately I've been on a Chia Seed kick- Mamma Chia has the best Chia products I've tried in a while so I put all of the yummy-ness together in this Chia Seed Pudding (3 different ways.) The bottom layer is a Berry Bliss Chia Pudding, the middle layer is an Acai Chia Pudding and the top layer is a plain Vanilla Chia Pudding.  

It's so easy to make and is good for you. Try it out!

INGREDIENTS

For the plain Chia Seed Pudding Base: 

3 Tablespoons Chia Seeds (I used Mamma Chia brand) 

3/4 Cup Vanilla Unsweetened Almond Milk (or any liquid of your choice) 

1/4 Cup Water

1 Packet Of Stevia OR 1 Tbsp Raw Honey  

 You Will Also Need:

1 Tablespoon Berry Bliss (purchase on thephilosophie.com) 

1 Tablespoon Acai Powder (I used Navita brand) 

 

DIRECTIONS

1. In a small mixing bowl, combine chia seeds, liquids and sweetener and mix until there are no big lumps. You will need to keep mixing every 30 seconds or so just until the chia seeds begin to absorb the liquids. Otherwise they'll stick together in a huge clump. 

2. Grab 2 more small bowls and split the chia seed mixture evenly between the bowls. You will have 3 in total. Mix 1 Tablespoon of Berry Bliss into one of the bowls and the Acai Powder into another. You will have 3 different colored puddings.

3. Cover the bowls with plastic wrap. Place all 3 bowls in the refrigerator for at least 30 minutes or overnight. 

4. Add on any toppings- enjoy!!  I topped mine with Raspberries and Gogi Berries. 

 

NOTE: you can use ANY mix-ins of your choice such as cacao nibs, cocoa powder, blueberries, or any other yummy products from the links listed above.
